The evolution has been caused due to two main reasons, changes in the consumer market and the birth of a billion-dollar food industry. The food industry has changed, it has expanded, it is now much bigger than it was 10 years ago with the presence of big corporations and food is one of the biggest tradable commodities in the consumer market. The consumer has also changed in the past few decades, he is now always on the go and has no time as a result fast food is the now the food of the millions. The industry has exploited these changes in our social and cultural environment over the past few decades to further drive up their profits. In this essay I will explore the two-principal ways in which our food culture has changed and what has lead to this change. I will throw light on the changes in the consumers attitude and explore the change in the meaning of food over the past century. Along with that I will describe the evolution of the food industry in great detail. What has been integral to both these changes is the change in how we view our food; food is no longer just energy and a necessary human need but is money, it signifies a big market that is being exploited.
The growth of the food industry has been essential in shaping up the modern food culture as it is today. With technological innovation the food industry now draws much of its energy from fossil fuels instead of the sun. Michael Pollan in his book “Our National Eating Disorder” says, “the result of the innovation has been a vast increase in the amount of food energy available to humans”(Pollan 7). The increase in the amount of food energy available has only added to our troubles. Long faced with the dilemma about what to eat, we continue to struggle to understand ourselves and still do not know what to eat. This dilemma is exploited by the modern food industry to its advantage. According to Fischler, “The modern eater has become a ‘mere consumer: an increasing proportion of population consumes food of whose production, history and origins it knows nothing”(Fischler 289).
Food and food ingredients are available in much more than they are in the past”(Fischler 291). The modern food industry continues to capitalize on a growing number of new commodities with the aim of increasing human abundance. For example, more and more consumer food products are being grown by a variety of agriculture practices. These new technologies can become important for providing essential elements such as fruits & vegetables & spices, in addition to providing natural and industrial foods that are good for your health but good for a small portion of the population. By the end of this century and beyond, the number of meals consumed in the United States will nearly double and the number of people in need of food will continue to increase. If the process could not be stopped, such a move would be inevitable. The future of food seems to promise greater and greater changes as food technology advances and changes food regulations. Fischler 1 et al. (2012) report that:
As food advancements, the need for fewer calories increases, and consumers demand less and less from their foods, less and less will be necessary. Such a decrease of calories will drive the food trade closer. As consumers demand fewer calories, then less, greater and greater gains in food safety and quality will arise.
More efficient consumption mechanisms will help feed consumers and maintain a high standard of living.
In other words, the process of increasing food production and quality will require further adaptation to meet this changing social status. To this end, Fischler 1 et al. (2012) report that:
One of the first steps toward further adaptation to change in the food industry is to develop new approaches to improving food quality and safety. Although new food components with proven track records should be available for each consumer, there could be no guarantee of increased safety and better outcomes for consumers. In particular, a better understanding of how the food system can be improved requires new food components developed and updated, and the implementation of such components should advance the industry on the merits of increased food quality; further improvements in improved safety and health are likely to occur over time.
To our knowledge, no significant technological changes have occurred that have improved food quality over twenty years in the food industry.

More and more scientists are turning to food for the world to find out what the health and safety risks of meat are. Researchers are using food from around the world from the “global food supply” project and the European Commission to create guidelines on how to provide safe, high quality, natural-life foods for the developing world and those that don’t. In recent years, countries such as Kenya, Ethiopia have been experimenting with the new approach to eating meat, with more than 3,000 health and safety monitoring studies, and several leading countries including the UK, France, Italy, Netherlands and Sweden.
Food industry in the United States is well-funded. The food companies in New York and Chicago are the biggest employers in a growing number of food products and services. In Chicago, we have the largest food and beverage companies, with $12.7 billion in revenue and $30 million in assets.
Some of the world’s most famous food companies, like Amazon, are also among the very influential global food companies, often for very little-known reasons, such as their huge market strength or a lack of innovation in their products. One major food company, Domino’s Pizza, has been in a state of major controversy recently after a recent study published in PLoS one, in which researchers examined food products from nearly 30 countries. They found that among the items with potential health and safety problems among the foods, five were classified as “probably carcinogenic and carcinogenic by our international panel.”
The study concluded, “Our research provides evidence linking an active use of polyunsaturated fats with greater intakes of human foods including meat and fat, dairy products, poultry and eggs, as well as the possible effects of certain polyunsaturated fatty acids on healthy development and function.”
Nestle is the major food conglomerate in the US, with around 70% of the company’s total assets located in the U.S. Nestle sells a wide range of various food products and services to consumers, including food, beverages, sports drinks, and sports equipment such as televisions, cell phones, laptops, mobile phones, and tablets. These products can be purchased or purchased in the United States, where they come with a health and safety record of 97.3% vs. the U.S.’s 83.7%, as well as in Denmark and Switzerland, where the health and safety score on the health and safety rating scales are lower than at home.
