Jollibee Foods Corporation
Zenith Foods Corporation (also referred to as “Zenith” or “ZFC”) is the central commissary of the Jollibee Foods Corporation, the largest fast food chain in the Philippines and first publicly listed Filipino food service corporation (Corbin, 2010), strengthening its expansion during the 90’s first half. According to a public domain Jobcity.net, Jollibee is “currently the most advanced food processing plant in the Philippines and one of the best in Asia” and has become a strong market leader surpassing the worldwide phenomenon of McDonalds, its closest competitor.
Established in the early 2000s, it was established as a corporation to maintain the conglomerate’s growth and intentionally lessen the “labor unions” of JFC, points identified during the field trip. Currently, there are four commissaries having the one we have visited in Canlubang, Laguna as the central site. With over 800 stores (both owned and franchised) locally and abroad, Zenith produces the products sold by the JFC subsidiaries including but probably not limited to Greenwich, Chowking, Mang Inasal, Red Ribbon, among others.
Some ingredients are imported from foreign countries as it enables more security of supply, this include Australia and New Zealand due to the insufficiency or inefficiency of local production of beef. For other menu products such as the sundae and fries, these are also imported from other countries rich in production with strict specifications from Jollibee. The Supply Chain group, a subsidiary, produces forecasts for the products. To ensure quality, Zenith has separate production lines for specific products, namely: bread, pie, sauce, meat processing, frozen patty, dry blending, marinated chicken, and shanghai production lines. Some of which were not able to be seen by the students, including the dry blending, marinated chicken and the shanghai line.
For the bread and pastry line, they manufacture the burger
