Ever since I can remember I have been in the kitchen baking with my grandma. It is something fun that my grandma and me have always been able to bond over. She has taught me all of her tips and tricks to make icing and decorating deserts even faster. Making a homemade cake or cupcakes is easer then you would ever imagine.
My favorite thing that my grandma and me make is homemade moist funfetti cake. Before my grandma showed me how to do this, I would just go to the store to buy the funfetti mix and buy frosting. I will never do that again though. I know for all you newer bakers it would seem pretty intimidating to make a cake from complete scratch. There is a simply way to do it though. The recipe for cake batter is actually pretty universal. All cake batters have flour, baking soda and powder, sugar, vanilla extract, salt and eggs. As long and you have those basics in your batter you are three quarters of the way there. The ingredients for the funfetti cake batter are: 1 and 2/3 cup all-purpose flour, ½ teaspoon baking powder, ¼ teaspoon baking soda, ½ teaspoon salt, 1 cup granulated sugar, ½ cup (1 stick) unsalted butter, melted, 1 large egg, ¼ cup yogurt, 3/4 cup milk, 2 teaspoons vanilla extract, ½ cup sprinkles. When it comes to the sprinkles, I like to use the little ball ones because they have a much cuter look to the cake. If you do not already know the reason that we use yogurt is because it will give you a much moister cake in the finished result. If you did not want to use yogurt, you could either use sour cream or instant vanilla pudding. I’m not talking about the snack packs. I am talking about the powder that you get in the box.
First you would want to pre-heat the oven to 350 like any other cake mix and grease up your pan. Next in a bowl you are going to combine all the dry ingredients, and mix them together. Then in another bowl combine softened butter, and sugar, mix together. After that you are going to add the egg, milk and your yogurt, and cream together. The next step you have to do very carefully; you are going to mix in the dry ingredients with the wet ingredients a ¼ of a cup at a time until it is fully incorporated. Next is the fun part add in the sprinkles and fold them in ever so slowly so they do not bleed into the batter. It is going to seem pretty thick but that is okay, that is exactly what it should look like. You are going to put it into the pan and bake for 20 minutes or until you can stick in a toothpick and it comes out clean.
