PROJECT PROPOSAL
“Chicken Kroepek”
Introduction
Kroepek is a popular snack in the Philippines. It is usually fried prawn – flavored crackers made from starch and other seasonings. Ingredients are mixed and divided into equal parts. The mixture is then dried under the sun or dehydrated to remove the liquid in it and fried until it expands and becomes crispy.
The Project
This project is contemplated to conduct a feasibility study to demonstrate the basic concepts in food dehydration as applied to making chicken – based kropek.
Project objectives
This project aims the following:
help promote the importance of locally produced food towards achieving food security
provide facilitation and other skills related to food preservation and development for sustained program effectiveness
provide project income and value – added business
Scope and Need of the Project
Making kroepek can be done by all people. It may offer an idea of mobilizing skills and improving the quality of life by transforming it into a business. Through this, it may also serves as way to spread awareness about food preservation through the process of drying.
Manufacturing Procedure
First, washing of rice and soaking it overnight should be the first one to do. The following day, wash it again and then drain. Cut chicken breasts into small cubes, blanch afterwards and combine it with 2 cups of the soaked raw rice. Then add 2 cups water to the rice – chicken mixture and grind through a meal grinder. Blend it with 2 teaspoon fine salt, ½ teaspoon monosodium glutamate, and 2 tsp lime solution.
After mixing all the ingredients, prepare a steamer and place a rack at the bottom and pour enough water up to the level of the rack. Next, pour a thin layer of the prepared batter into lightly greased flat – bottomed molder. Spread the batter evenly onto the molder. Cover the steamer and let it steam for 3 to 10 minutes or until the batter in thoroughly cooked. After that, remove the molds from the container, cut the cooked batter into desired shapes and gently remove from the mold. Dry the kroepek under the sun until hard and translucent followed by storing it in moisture proof bags. Finally, deep fat fry and serve at once.
